Ingredients-
Chicken breasts thawed
Whole Green chiles
Green Chile
Shredded Cheese
Directions-
Place one chicken breast in a gallon zip lock baggie and pound out to a thin, even thickness. Place one whole green chile in the center and top with about an ounce of shredded cheese. Roll up chicken breast with chile and cheese inside. Place in a cake pan ... 9X13 for around 8, or 9x9 for just a few pieces (trust me you will want left overs) Repeat until all chicken is used. Top with Green chile (verde??? not sure, but this Hatch Valley is the bomb) and more shredded cheese. Bake at 375 for about 40-50 minutes. Serve with rice, salad, roasted veggies.....delish!!!
